The Story of Nick Tolbert
I began my culinary career at the age of sixteen working as a floor chef in various hotels in my native town of Cincinnati, Ohio. After completing a cooking course at the Stowe Adult Trade School, I knew that I had discovered my true passion. With the guidance and assistance from my executive chef and mentor, I applied to the prestigious Culinary Institute of America, where I graduated from in 1977. Coming from one of the top cooking schools in the world, I was fortunate to immediately join the team at the Hyatt located in downtown Chicago. During my career in the kitchen and eventually executive management, I worked for major hotels, prominent restaurants and large scale food service operators.
After almost twenty years away, I chose to return to Cincinnati to be back with my family and friends. While exploring various opportunities here, I began writing columns for a variety of publications to include our city's major newspaper, The Cincinnati Enquirer. Drawn to the media, I ended up hosting a local radio show and producing my own television program, which ended up airing nationally on BET's jazz station.
Here it is, 2009, and my company is about to produce The Midnight Gourmet Television Show in partnership with WCET, channel 48 – Cincinnati's PBS affiliate. It is already approved to be distributed nationally through American Public Television in Boston which coordinates the public stations throughout the country. I'm still hosting a successful radio show called Dining Entertainment on WCIN 1480 Smooth Jazz which is available by podcast or you can stream it live at wcinam.com every Sunday at 11:00 a.m. (EST).
