Caesar Salad Cardini

INGREDIENTS

  • 2 Medium heads of lettuce
  • 1/2 tsp. freshly ground pepper
  • 1/2 tsp. salt
  • 6-8 tblspn frsh grated Parmesan Cheese
  • 2 coddled eggs (Raw eggs boiled one minute)
  • 8-10 drops of Worcestershire Sauce
  • Juice of 2 Med lemons
  • 1/2 cup garlic flavored oil*
  • 1/2 cup croutons

DIRECTIONS

Beak Romaine lettuce (cold, dry and crisp) into 2 inch lengths or use whole inner leaves. Then pour 1/2 cup of garlic-flavored oil over the lettuce. Toss gently 2-3 times. Break eggs and add Worcestershire sauce and the juice of lemon juice, then toss 2-3 times. Sprinkle parmesan cheese over the salad. Add croutons, toss once again, arrange on chilled dinner plates and serve.

*Garlic-flavored oil: Marinate 4 to 5 large cloves in 1 1/2 cups virgin olive oil. Cover and let sit for 4-5 days. Remove all garlic.
