French Muffins w/ Strawberries & Sour Cream

INGREDIENTS

  • 1 Pint Strawberries
  • 1/4 Cup Sugar
  • 3 Eggs
  • 2 Tbs Milk
  • 1/2 tsp Cinnamon
  • 2 Tbs Sugar
  • 1 tsp Vanilla Extract
  • Pinch of salt
  • 2 English Muffins, split
  • 1 1/2 Tbs Unsalted Butter
  • 1/2 Cup Sour Cream

DIRECTIONS

Set aside a whole strawberry for garnish. Slice the remaining berries and put them in a small bowl. Sprinkle with the 1/4 cup of sugar and toss to coat.

In a large shallow dish, lightly beat the eggs, milk, vanilla, spices, sugar, and salt until blended. Place the muffin halves, split-side down in the egg and milk mixture. Prick the muffin with a fork and soak for 1 to 2 minutes. Turn the muffins and soak until moist throughout, 1 minute longer.
In a large skillet, melt the butter over moderate heat. Add the muffins and cook until golden brown on the bottom about 2 minutes. Turn and cook until crisp and brown on the second side, about 2 minutes longer.

Remove the muffins to serving plates and top each half with sliced berries and a spoonful of sour cream. Garnish each plate with a whole strawberry.
