Pan Seared Salmon w/ Bacon, Garlic & Red Wine

INGREDIENTS

  • 2 – 4oz Salmon Fillets
  • 4 – Strips of Bacon
  • 2 Tbs Chop garlic
  • 1 Tbs Chop Shallots
  • Salt & Pepper
  • 2 Tbs Mayo
  • 1/4 Cup Red Wine
  • 2 Tbs Chop Parsley

Garnish

  • 4 Stems Green Onions
  • 4 Tbs Diced Red Peppers

DIRECTIONS

Pan fry bacon in a heavy skillet until done. Remove bacon and pour off fat. Melt 2 Tbs of butter. Season Salmon fillets with salt and pepper and add to skillet and sear until brown on both sides. (2 – 3 minutes per side) Transfer to heated plates, turn heat down to medium and add shallots and garlic. Sauté about 1/2 minute and glaze with Red Wine. Whisk in mayo, add chopped parsley. Simmer and serve over bacon and Salmon fillets. Garnish with stems off green onions and diced red peppers.
